We're lucky around here… quite a few VPR staffers are terrific cooks. Fabulous smells often emanate from our kitchenette, and we do a lot of recipe swapping and taste testing! We love to cook for one another, and we'll use this page to showcase some of our favorite recipes, as well as the stories and traditions behind them.
My family loves food. I mean, really loves food. We've been known to bring a cooler to funerals, and guests at my parents' house are always confused by how we talk about lunch at breakfast, and discuss what to make for dinner at lunch. So it shouldn't come as a suprise that while most families would bring sandwiches and chips for a day at the beach, mine brought spinach pie. It's my grandmother's recipe - delicious hot or cold!
Ingredients:
6 pkgs. plain frozen chopped spinach, thawed and drained well - squeeze out all liquid
2 8-oz. pkgs. shredded mozzarella cheese
2 8-oz. pkgs. shredded cheddar cheese
Salt, pepper, and red pepper flakes (if desired), to taste
4-6 cloves chopped garlic (or to taste)
4 pie crusts, frozen or homemade
Mix all ingredients well and put into two pie crusts. Top each with a second crust and pinch closed. Bake at 350 degrees for 35 - 45 minutes or until crust is lightly browned.
