Maple Glazed Carrots

This is a very quick & simple way to make carrots more interesting. Enjoy any time, but it especially compliments a roast chicken or baked ham dinner.- Kristen, Bethel

Carrots (any amount you need, cut the way you like them - I make "sticks")
1/2 cup maple syrup
1/2 stick salted butter
Salt and pepper, to taste

Parboil carrots until just soft enough to cut through easily with a dull knife. Don't allow them to get mushy. In a small saucepan, warm maple syrup and butter on medium heat until butter melts. Bring to a low boil, stirring constantly. Let simmer about a minute, stirring constantly. Drain carrots and place them in a glass baking dish. Toss in enough glaze mixture to lightly coat all the carrots. Add salt & pepper to taste.

Bake for 15-20 minutes at 400F, or alongside your roast for a bit longer. Stir occasionally. Let the carrots brown a little. If you're serving with a baked ham, these carrots can go right in the roasting pan with your ham - use any extra glaze to brush on the ham just a few minutes before it's done.
