Purple Knights' Green Apple and Blue Cheese Coleslaw

Purple Knights Pizza is located in Colchester, Vt, just up the street from VPR

"Try this. Try this, try this, try this." That's what VPR's Jody Evans had to say to anyone who would listen recently after she picked up some of Purple Knights Pizza's green apple-blue cheese slaw for lunch. One bite, and we figured out why! The VPR Cooks team set out to procure the recipe so we could share the culinary joy Purple Knights so often brings VPR and its staff.

1 cup apple cider
1/3 cup apple ider vinegar
2 Tbsp. minced shallot
1 Tbsp. Dijon mustard
¼ cup sugar
½ cup olive oil
½ cup canola oil
3 green apples (sliced)
Juice of 1 fresh lemon
1 head purple cabbage (thinly sliced)
3 carrots (grated)
1 bunch scallions (sliced)
½ cup cranraisins
½ cup Gorgonzola

Place cider and cider vinegar in a pan and reduce until thickened. Whish together shallot, mustard, sugar and cider reduction. Slowly whisk in oils to emulsify dressing. Set aside.

Slice apples and toss with lemon juice. Toss together shredded cabbage, carrot, scallion, cranraisins and apples. Add dressing and top with blue cheese crumbles.

Makes about 2.5 pounds.
