Sherry Mahady's Broccoli Salad
Sherry Mahady is VPR's Membership Coordinator.
This is has been my favorite take-to-pot-luck-affairs dish for 30 years. The dressing can be made ahead, it travels well, most people love it. Another name for it is Winter Salad--a hearty alternative to lettuce-based salads in cold weather.
1 cup mayonnaise
¼ cup sugar
2 Tbsp. white vinegar
10-12 slices cooked bacon, crumbled (or 1 jar real bacon bits)
½ small onion, chopped fine
½ cup raisins
¼ cup nuts or seeds (walnuts, raw sunflower seeds, etc.)
Florets from 1 large bunch of broccoli
Combine mayonnaise, sugar, and vinegar. Add all other ingredients except broccoli florets and stir until thoroughly mixed. Pour dressing over broccoli and mix well.
