Apple-Carrot Salad for a Healthier Vermont
1 cup shredded carrot
3 (medium) unpared and diced apples
1 Tbsp lemon juice
1/2 cup raisins
1/3 cup low-fat mayonnaise
Combine all ingredients. Chill thoroughly. Serve on salad
greens. Serves 6. Provides .5 cups of fruits and vegetables per serving.
