Vermont Foodbank's Gougere (Cheese Pastry)

1 cup water
1 stick butter [8 tbs.]
1cup flour
5 eggs
3 cups cheddar cheese
Salt and pepper
2 scallions, chopped
Place water and butter in a saucepan and heat until butter melts. Fold in flour all at once and stir with a wooden spoon until it is gathered into a ball.
Beat 4 eggs one at a time into flour paste. Fold 2 cups cheese into flour mix along with scallions, salt, and pepper.
Place batter in an 8 inch glass pie plate. Beat remaining egg and brush dough with it. Sprinkle remaining cheese over all.
Bake in a 375 degree preheated oven for 45 minutes until puffed up and golden.
